40 days
so my 40 days of fasting and abstaining from red meat ends this easter monday. to tell you the truth, it's made the difference in my life. aside from my slip last week when we went to cooper's and i got the nacho's with chili (and beef), i haven't missed red meat. chicken and fish as a staple has elevated my mood and most likely added a little more time to my lifespan. i do miss mom's porkchops, calderetta and sinigang but i certainly don't miss mc donald's, saturated fat, and especially not the bowl of pre-boiled short ribs that we refrigerate before fully cooking; skimming the surface of the fatty precipitate from that is quite the graphic educational experience.

although i've enjoyed whipping up new and experimental fish and seafood dishes, i have to admit, next week, i'm gonna have to cop a burger from apache or even a nice plate of ribs elsewhere. a ruben sandwich might do the trick too.

but hey....it's portugese fish for easter dinner. the cow can wait.
